Gender Reveal Baby Cupcakes (naturally)

Are you planning a baby shower? There are so many ideas, themes and cute things to do! I really struggled narrowing down my ideas for this one. One popular theme is the the “Gender Reveal” parties. There are many ways to reveal the gender to your guests and one of those ways is through the food. I am not a big fan of the chemicals in food coloring. I really try to avoid it as much as possible. You can create pink or blue cupcakes with fruit. There are a variety of options, but for this recipe, I chose strawberries and blueberries. You can decorate the cupcakes in both pink and blue, then reveal the gender with the color of the cake. Pink for girl and blue for boy of course.

I found these cupcake wrappers from Wilton® at Jo-Ann Fabric and Craft Stores. They are so pretty and went well with my pink and blue theme.

Baby Cupcake Recipe

1/2 cup softened butter
3/4 cup of sugar
2 eggs
1 tsp. vanilla extract
3/4 pureed strawberries for pink or 3/4 cup pureed blueberries for boy.
2 cups all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
2/3 cup cold milk
Preheat oven to 350°F.

 

Bake Time: 18-24 minutes.

 

Yield: 12 cupcakes.

 

Cream butter and sugar. Add eggs 1 at a time, beating after each addition. Stir in vanilla.

 

In a separate bowl, stir together all dry ingredients. Add to butter mixture; stir in milk.

 

**Lemon Cream Cheese Frosting***
8 ounces cream cheese, softened
1 tsp of real lemon extract of
1/2 cup butter, softened
2 teaspoons vanilla extract
4 cups confectioners’ sugar
(whip all ingredients together until fluffy) Put icing in icing bag with very large tip.

Extra decor option – I did add a sprinkle of pink and blue disco dust to the tops.

If you dust it very lightly, it gives the perfect amount of soft sparkle.

 

This negates the “natural” cupcake, but it is really pretty. In my opinion, a little dust is okay.

    I’m thinking there are some things wrong with your recipe……#1 you don’t say when to add in the berries. #2 I followed instructions and had a cake that didn’t rise. #3 Blueberries make it purple, not blue…..I liked the flavor but wish it would have at least risen.
