Easy Veggie Lasagna

This was so easy, I almost feel silly writing a “recipe” for it. I made this last night along with a fresh salad and Italian bread (see recipe for Italian bread here-http://34.192.0.255/eggplant-parmigiana-italian-bread/)

I feel like I have been slacking in the kitchen lately. School started, sports started, the Mister’s travel started, so it has been easy to do quick pastas, sandwiches, even pancakes and eggs one night! The family was past due a “meal.” However, we still have the above list of life to contend with, so I wanted something fast and healthy. This “Veggie Lasagna” fit the requirements and was delicious! Let me know what you think.

Ingredients:

1 box of lasagna noodles
1 16 oz. carton of cottage cheese
1 cup of Parmesan cheese
1 egg
2 cups of mozzarella ( one cup for cottage cheese mix, the other for the layers)
1 box of frozen spinach (thawed and drained)
1/2 cup of shredded carrots. *you can add mushrooms, zucchini, squash, etc. We just had carrots this evening.
1 jar of spaghetti sauce
S&P to taste.
Olive oil

-Boil the lasagna noodles according to package.

-Mix the cottage cheese, Parmesan cheese , 1 cup of mozzarella, spinach, carrots, egg, and salt and pepper to taste. Set aside.

Coat the bottom of 9×13 casserole dish with spaghetti sauce and a tablespoon of olive oil. Lay one layer of lasagna noodles.

Next add a layer of cottage cheese mixture. Then add a layer of spaghetti sauce sprinkled with mozzarella cheese. Repeat leaving the top layer sauce and cheese. *you will have a few noodles left over.

Bake at 350 degrees uncovered for 25-30 minutes. Enjoy!
